 Category: natural wine, from  Attiki, without the addition of sulfites from organic grapes. 60 year old vineyard
 
  Variety: Savatiano 100%.
 
 Winemaking: The harvest in mid-September produces overripe grapes with special aromas. Fermentation takes place with native yeasts without the addition of sulfites. In addition, carefully hand-selected and frozen yeasts are added to the tank to enhance the taste and aroma of the wine. The fermentation is completed in barrels (50% oak and 50% acacia). At the end of fermentation, no sulfites are added until bottling.
 
 Alcohol: 14.5% vol.
 
 Organoleptic characteristics: The aromatic and taste complexity of this wine is unique: rich and complex aromas of tropical and spring fruits, citrus peel with sweet spicy notes, with intensity and duration. In the mouth, the complexity of taste confirms its aromatic composition. The sweet aftertaste and greasiness give the feeling of a perfect wine. The maturation gives new aromatic and delicious notes. Despite the total absence of sulphites, it matures very well in the bottle.
 
 Accompanies special dishes that many wines cannot be paired with, such as stuffed baked tomatoes, legumes, boiled meat and soups. It can also be combined with cheese with special flavors, such as blue cheese.
